Apple Crisp Muffins

Warm and delicious Apple Crisp Muffins are the perfect breakfast treat for any fall or winter morning! Gluten free, refined sugar free, dairy free and low fat make these muffins a healthy sidekick to your morning coffee.

What do you do when you’re craving warm banana bread but you only have apples in your fruit basket?  Come up with an apple bread recipe?  Is that even a thing?  It is now!  NOTE: the first time I made this recipe I made it into a breakfast bread loaf, the same ingredients are used for muffins, just the cook time varies.

I was looking for a warm winter treat, but one that could be labeled “healthy” along with “comfort food”.  Hoping for something similar to a cobbler, but fluffy like a muffin, and I also wanted it to be healthy (as usual) so I can consume without the guilt!  And here is what I came up with…

A delicious bread that is gluten-free, refined sugar-free, dairy-free, and low-fat.  And the best part… it is a breakfast bread with dessert tendencies.  Just as I was hoping, it ended up similar to a cobbler and fluffy like a muffin.

Ingredients

  • Coconut Oil Melted
  • Apple Sauce
  • Apples – Peeled & Diced
  • Real Maple Syrup
  • Vanilla
  • Eggs
  • Almond Milk
  • Almond Flour
  • Baking Powder
  • Baking Soda
  • Salt
  • Protein Powder – Vanilla I use Tone it Up, Plant based, no added sugar vanilla protein powder
  • Cinnamon

The crispy crunch topping gives it that perfect apple crisp texture, as you may see in other bread or muffin recipes, my crunchy topping is a version of my homemade granola.   The sweetness in the bread and topping come from maple syrup.  Then when you add a heap of cinnamon to that maple syrup you start feelin all the warm cozy vibes.

Crunch Topping Ingredients

  • Flax Meal
  • Oats
  • Almond Flour
  • Pecans ( Other nuts, walnuts or almonds, will work too)
  • Real Maple Syrup
  • Cinnamon
  • Coconut oil 

It is the perfect bread to whip-up over the holidays.  When you have guests staying at your house, or even a great gift for a host.  It is a great recipe to share with loved ones, but there is also no guilt in eating it all yourself!


Apple Crisp Muffins

Ingredients
  

Muffins

  • 1 Tbsp Coconut Oil Melted
  • ¼ C Apple Sauce
  • ¼ C Real Maple Syrup
  • 1 tsp Vanilla
  • 2 Eggs
  • ¼ C Almond Milk
  • 2 C Almond Flour
  • 2 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 tsp Salt
  • ¼ C Protein Powder – Vanilla I use Tone it Up, Plant based, no added sugar vanilla protein powder
  • 1 Tbsp Cinnamon
  • C Apples – Peeled & Diced (about 2 apples) Apple of choice, I use Fugi

Topping

  • 1 tsp Flax Meal
  • ¼ C Oats
  • ¼ C Almond Flour
  • ¼ Pecans Other nuts, walnuts or almonds, will work too
  • 2 Tbsp Real Maple Syrup
  • 1 tsp Cinnamon
  • 1 Tbsp Coconut oil Melted

Instructions
 

  • Peel apples and dice them to about the size of chocolate chips and set aside.
  • Mix wet ingredients: coconut oil, apple sauce, maple syrup, vanilla, eggs, almond milk.
  • Then add the dry ingredients: Almond Flour, baling powder, baking soda, salt, Protein Powder, and Cinnamon.
  • Once all the ingredients are fully incorporated add the diced apples
  • Line a muffin tin with parchment cupcake paper.
  • Fill each cup with a scoop of batter.  The amount of batter will fill 12 cups evenly.  The batter will rise just slightly about a 1/4 of an inch.
  • Bake 350 degrees for 35 minutes until the topping is a crisp golden brown.  Check with a toothpick, when it comes out clean it should be ready.  Let the muffins rest for 10 minutes before eating.
