This healthy homemade version of the Taco Bell Mexican Pizza, is delicious and so simple. With the same great taste this recipe is a low fat, and grain-free version of the fast food Mexican pizza.
Who doesn’t love a Mexican Pizza. I mean Mexican food built like Italian food? Can’t go wrong! An invention made popular by Taco Bell, until 2020 when they decided to take it off their menu for unknown reasons. But that gives me even more motivation to make my own homemade healthier version of the Taco Bell Mexican Pizza. I mean, I love making my homemake version of a crunch wrap supreme… I’d like to pre-apologize for ripping on Taco Bell a little bit, but the last time I ordered a crunch wrap supreme it was basically all tortilla. The ingredients inside were pitiful. So I love it when I make these copy cat recipes at home, I not only control the quality and nutritious content of ingredients, but I also get to control the portion!
Ingredients
- 8” Siete tortillas (2 for each pizza)
- Avocado oil
- Ground beef (lean 4-10% fat or sub for ground turkey/chicken)
- Taco seasoning packet (low sodium)
- Refried beans (pinto or black)
- Siete Enchilada Sauce
- Shredded Sharp or Colby Cheddar Cheese (or Daiya sub)
- Roma tomato (chopped)
- Green onions
Tips and Substitutions
- Siete Tortillas can be either the Almond or Cassava flour. Or substitute for your favorite tortilla
- In my personal opinion I LOVE the Siete Red Enchilada Sauce. Not only are the ingredients good and very good for you, but its has a great flavor that is not too heavy like other canned enchilada sauces. When it comes to other canned sauces I always feel I need to add a lot of my own ingredients to improve it. If I am not using the Siete Red Enchilada Sauce, my second go to is the Trader Joe’s Enchilada Sauce, again it is a little more on the lighter side, so I prefer it over the canned sauces as well.
- I have used both ground beef and ground turkey and with the added taco seasoning it really does not matter which meat you choose. I generally use the ground beef with the 4% fat and always use a little extra water with the taco seasoning packet to keep the meat saucy.
- When layering your pizza I like to spread on the beans first, then I like to add a small spoonful of enchilada sauce then the meat, (if you like cheesy you can add additional sprinkle of cheese over the meat) then the next layer of tortilla, drenched with the enchilada sauce and then topped a heavy layer of cheese to be melted, and lastly sprinkled with tomatoes and green onions.
Mexican Pizza (copycat)
Ingredients
- 4 8" Siete tortillas 2 for each pizza
- 1 Tbsp Avocado oil
- 1 Lb Ground beef lean 4-10% or sub for ground turkey/chicken
- 1 Taco seasoning packet low sodium
- ⅓ C water
- 1 Can Refried beans pinto or black
- ½ C Siete Enchilada Sauce
- ½ C Shredded Sharp or Colby Cheddar Cheese or Daiya sub
- 1 Roma tomato chopped
- ¼ C Green onions
Instructions
- Heat the oven to 350
- In a large pan heat some avocado oil and cook meat until it starts to brown. In a small pot cook the refried beans on low, stirring occasionally.
- While the meat is cooking line a baking sheet with parchment paper. Spread out the tortillas onto the sheet (you will need 2 tortillas per pizza) and bake for about 2-3 minutes flipping the tortillas half way trough. For more crispy, tostada-like tortillas spritz them with a little avocado oil and bake for 1-2 minutes longer.
- Once the taco meat has browned add your choice of taco seasoning packet, along with the water to make the meat saucy.
- When the tortillas are ready switch the oven over to broil on high.
- Take one tortilla, spoon a small amount of enchilada sauce on to one side and then spread on a layer of refried beans on top. Next, top the beans with a layer of ground meat. Add your 2nd tortilla on top of the meat and spread a generous amount of enchilada sauce on the tortilla. Sprinkle shredded cheese over the sauce and top with diced tomatoes and sliced green onions. (repeat these steps on the other 2 tortillas)
- Place the baking sheet back in the broiler for about 2-3 minutes until the cheese is all melted. Cut your pizzas into fourths, and enjoy!
